Review: Flavorful, easy meals with Gourmia Sous Vide Pod

SEATTLE, March 10, 2016 — One of the more recent crazes in home cooking is that of sous vide – it’s a French term which simply means “under vacuum”.  The process consists of using an immersion circulator in water and an air-tight bag with your food in it. Commercial kitchens have been using immersion circulators for years now – they have the ability to hold food at temperature for hours without overcooking the food.

The advantage of combining that process with food in an airtight or vacuum-sealed environment is that any juices or aromas released by the food stay with the food. The end result is food that tastes more intensely like itself or with the included seasonings you may have used. What reverse searing entails is to cook a steak, for example, using the sous vide process and after it’s achieved perfect doneness, you simply throw it onto a hot pan or grill for 30-60 seconds per side to get that perfect sear.
