SEATTLE, March 10, 2016 — One of the more recent crazes in home cooking is that of sous vide – it’s a French term which simply means “under vacuum”. The process consists of using an immersion circulator in water and an air-tight bag with your food in it. Commercial kitchens have been using immersion circulators for years now – they have the ability to hold food at temperature for hours without overcooking the food.
