LOS ANGELES, January 30, 2014 — Everyone loves a slinky and just as many people enjoy the grilled cheese sandwich. 2 Slices of Sourdough bread
2 slices of American cheese
1 slice of purple onion, chopped
1 half of an avocado
2 spoonfuls of black beans
1 splash of olive oil
Tapatío hot sauce

Heat olive oil in a skillet. Add chopped onions. Stir frequently until onions have a brownish color, then remove. Spread butter on one side of sourdough bread and place in cooled skillet. Layer one slice of cheese, black beans, avocado, and grilled onions. Drizzle Tapatío then top with second slice of cheese and second slice of buttered bread.

Cook at medium temperature until golden brown or to taste (this author prefers it to be a little blackened or “with flavor” as his mom used to say). Carefully flip the sandwich to make sure none of the inside wonderfulness escapes. Again, grill to your preferred taste. Remove from pan. Cheese will melt through and keep everything in place at this point.

Cut in half and serve.

Add-Ons: As with most things in life, adding bacon and a fried egg will only enhance your experience in this fleeting existence known as life.

Pairs with: Pabst Blue Ribbon
